ABOUT ME
One of the most awarded regions in Brazil, the Serra da Mantiqueira (Mantiquiera Mountains) lies to the south of the state of Minas Gerais. This particular lot hails from Sítio Bela Vista, a farm expertly run by Ana Cristina Junqueira Villela and her four children.
The property in Dom Viçoso, has fertile lands and forest reserve areas, where natural springs are preserved to ensure abundant fresh water for native flora and fauna. In addition to the cultivation of quality coffees, the property is also dedicated to raising Mangalarga Marchador horses.
BREW GUIDE:
We recommend the following recipe as a starting point:
Brew temperature: 93.2ºC – 93.7ºC
Dose: 21g
Brew weight: 42g
Brew Ratio: 1:2
Brew time: 26 - 32 sec
This recipe was developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways. Have fun experimenting.
