The mission of The Honey Thief is a simple one: combine sweet, juicy and lively coffees to capture a vibrant, wildly complex and seriously tasty fruit-driven espresso!
For this iteration of our lightest and brightest blend we've paired a little of the El Salvador Divisadero Natural to complement the majority of the cup, the Ethiopia Ayele Fulasa Gesha Natural, one of our most loved Special Selection coffees.
The Ayele Fulasa brings all of it's jammy stone fruit and honeyed sweetness we've come to know and love it for, pairing with the El Salvador Divisadero for it's rich, smooth and complex profile and further fruit sweetness providing a chocolate ganache mouthfeel and hazelnut accents.
It makes for an exceptional double with milk and is delicious using black brewing methods.

Recipe developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways. Have fun experimenting.
