PROFILE 
This big, bold and burly blend is our throwback to traditional espresso, with modern level sourcing. It's a delicious, syrupy and slightly smoky cup that’s straightforward yet endless in depth. 

We choose coffees for Papa Bear which relish a little more development time; a combination of seasonal washed coffees from Africa and Latin America with a high grade natural from Brazil.

We roast it's components just dark enough to create a heavy body, mellow out the acidity and transform the coffees' fruit flavours into deep, toasty, sugary complexities. 

In the cup you'll think of dark chocolates, toffees and warm pecan pie on the windowsill.

We recommend the following recipe as a starting point:

Brew temperature: 93.5ºC
Dose: 21g  
Brew weight: 42g
Brew Ratio: 1:2 
Brew time: 28 - 32 sec

Recipe developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways. Have fun experimenting.
