We recommend the following recipes as good places to start:
Espresso
Dose: 21g
Brew temperature: 93.5ºC
Bar Pressure: 8.0
Brew time: 24 - 30 sec
Brew weight: 42g
Brew Ratio: 1:2
Pour Over
Brew temperature: 93.5ºC
20g in 300ml out (1:15 brew ratio)
Espresso recipe developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways.
Pour Over recipe developed using Hario v60 and dry (not pre-wet) filter paper. Different coffees (and tasting palettes) will suit different brew ratios. Have fun experimenting.

Roaster's Selection Subscriptions started any time during the month are shipped together on the first Tuesday of the following month.
As we get everything ready, your shipping label may be created in advance - this triggers an email with your tracking info. While it might look like your coffee’s on the move, it won’t actually leave our roastery until that first Tuesday!

How it works
Each month, Alex selects something special - whether it’s a coffee we’ve sourced exclusively for this Subscription or a standout lot from our latest arrivals that’s tasting too good not to share. It’s our way of opening up the cupping table and letting you in on what we’re most excited about right now!
It’s simple:
Just tell us how much coffee you’d like for Filter and how much for Espresso - then let us know whether you’d like it Whole Bean (ideal!) or ground for your preferred brew method.
We’ll take care of the rest.
If you choose coffee for both Filter and Espresso, you’ll either receive two different coffees or the same coffee roasted to suit each brew method - depending on what’s tasting best that month.
Order by the last day of the month, and your coffee will be despatched on the first Tuesday of the following month.
We roast to order, so you’ll always get it fresh.
