Espresso recipe developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways.
Pour Over recipe developed using Hario v60 and dry (not pre-wet) filter paper. Have fun experimenting.

BEHIND THIS RARE LABEL
HACIENDA LA ESMERALDA GEISHA NATURAL
There are certain names in coffee that speak for themselves. Perhaps none more so than Hacienda La Esmeralda.
Widely recognised as the farm that brought Geisha to global attention, their coffees have gone on to define the upper end of what is possible - consistently placing among the very best coffees in the world. In 2025, their Best of Panama winning lot went on to achieve a record auction price of more than USD $30,000 per kilogram.
Fundador 6 NB was harvested on February 13, 2026 from the Fundador lot of Hacienda La Esmeralda's Cañas Verdes farm in Boquete, Panama. Following harvest, the cherries were taken to Hacienda La Esmeralda's mill in Palmira where they were slowly dried on raised beds for 47 days.
We had the opportunity to visit Hacienda La Esmeralda in late April this year and spend time with Rachel Peterson and her family. From the climate-controlled drying rooms and fermentation spaces to the meticulous attention paid to every stage of production, it was immediately clear why Esmeralda continues to set the benchmark for specialty coffee.
Among the twenty extraordinary Geisha lots we tasted, Fundador 6 NB stood out. Generous, expressive and remarkably composed, it possessed a rare combination of power and elegance. Notes of jasmine, dried mango, Morello cherry and honey are carried by a structure and depth rarely found in coffee. As the cup cooled, layers of fruit continued to unfold while its sweetness became increasingly pronounced. It was a coffee that felt complete.
By the end of the session, our decision had been made. This would become the coffee to launch KoKo Rare Label.

How do I receive free shipping?

One-time and Subscription orders equal to or more than $55 qualify for free standard shipping.

We ship freshly roasted coffee Monday - Friday and aim to dispatch within 24 hours. Orders placed after mid-day Thursday may not ship until the following week. We do our best to ensure that your coffee will arrive to you towards the start of it's optimum drinking time.
Shipping is primarily with Aramex Couriers or Australia Post. Please allow between 1-2 days after dispatch for local deliveries. We have been advised that interstate and remote areas take a little longer. A tracking number will be emailed to you from the courier when your order is on its way. To ensure you receive your coffee as quickly and as hassle-free as possible, the couriers have the authority to leave your package in case you’re not at home. If the driver can’t identify a safe place to leave your package, then it will be available for collection from your local Australia Post outlet, as per the delivery card left by the driver.
