This is an exceptional Colombian Natural Castillo. Rich, sweet and delicious with a silky smooth body and juicy stonefruit acidity. Notes of plum pudding, apricot and merlot in the finish.

La Pradera, Armenia, Quindío, Colombia
This 100% Castillo microlot is grown by Felipe Arcila at Finca Buenos Aires in El Caimo, Qunidío. The coffee is selectively hand picked then taken only 200m down the road to La Pradera Washing Station to undergo it's preparation. It's carefully hand floated then sorted on racks by Felipe, Ana and expert Cristobal before being laid to dry on the concrete patio to start the drying process. It's then moved to raised African beds promoting more even drying to finish the rest of it's natural process.
On our visit to La Pradera, Felipe showed us how he uses his teeth to get a good estimate of when the beans have reached their optimum moisture level. '11%' he says after he bites down on a bean from the patio. 'We'll give these a few more hours'.
Finca Buenos Aires is situated within the 'coffee triangle', an area 15 years ago renown for the highest coffee production in Colombia. It's cool climate, altitude and fertile volcanic soil make for ideal coffee growing conditions. This, coupled with Felipe's innovative and careful natural processing techniques make for seriously good coffees.
