ABOUT ME 

Dona Francisca and Don Oscar Chacon are third-generation coffee producers of Las Lajas, an organic micromill located on the slopes of the Poas volcano in Alajuela, Central Valley. As organic coffees in Costa Rica are almost nonexistent, this, along with the caliber of the cup, really makes it a gem of a coffee.

In 2008 an earthquake hit during harvest which left the mill at Las Lajas without electricity or water, whilst pickers continued to deliver coffee from up the mountain. It was at this time Oscar and Francisca took the plunge to process the coffee naturally. Although the first reaction from the local (old-school) cuppers was a tad subdued, the international coffee community loved the sweet and complex yet clean profile so it was decided from then on to continue to process Naturals and Honeys. Their processing methods have been continuously refined over the years to form what now is a reputation for producing some of the most unique and exotic Honey and Natural coffees around. 

Since 2018, they've been experimenting with a new Honey process named Diamond. These Black Diamond microlots require closer attention while drying than the other Honeys, as Oscar and Francisca want the temperature to stay very low throughout. First, with the fruit pulped from the bean but all the mucilage remaining, the coffee is pre-dried on raised beds for one day and not moved at all. It's then transferred to the drying patio where it's closely monitored for the duration, turning over or raked only once a day. All in all, this coffee could take up to three weeks to dry, much like that of a natural.
